Back to School: Lunch Ideas that are Sure To Please!

It’s that time of year again; time to stock up on supplies and get the backs packed for the first day of school. In addition to the kick-off of another new school year, we have put together a wide variety of lunch options to last the whole year.

Whether you’re looking to send the kids to school with a lunch that is healthy, creative, inexpensive, or all three, we gathered a variety of ideas that will make you and your kids want to brown bag it every day. Also, these can be great for the whole family too!

Pasta Salad with Salami and Mozzarella

Ingredients

  • 2  cups  gemelli (or other short pasta)
  • 2  cups  chopped spinach
  • 1  cup  grape tomatoes (halved)
  • 4  ounces  fresh mozzarella, cut into pieces
  • 2  ounces  salami, cut into pieces
  • 3  tablespoons  olive oil
  • 1  tablespoon  white wine vinegar
  • kosher salt and black pepper

Directions

1. Cook pasta according to the package directions; drain and rinse under cold water. Toss in a large bowl with the spinach, grape tomatoes, mozzarella, and salami.

2. Whisk together the olive oil, white wine vinegar, ½ teaspoon kosher salt, and ¼ teaspoon black pepper. Transport the pasta mixture and vinaigrette separately; drizzle the salad with the vinaigrette before serving.

Classic Chicken Soup

Ingredients

  • 1  3 1/2- to 4-pound chicken
  • 6  carrots, peeled
  • 4  celery stalks
  • 1  large yellow onion, quartered
  • 2 1/2  teaspoons  kosher salt
  • 1  teaspoon  whole black peppercorns

Directions

1. Place the chicken in a large pot. Cut 3 of the carrots and 2 of the celery stalks into 1-inch pieces. Quarter the onion. Add the cut vegetables to the pot with the salt, peppercorns, and enough cold water to cover (about 8 cups). Bring to a boil. Reduce heat and simmer, skimming any foam that rises to the top, until the chicken is cooked through, about 30 minutes.

2. Transfer the chicken to a bowl and let cool. Strain the broth, discarding the vegetables. Return the broth to the pot. Thinly slice the remaining carrots and celery. Add them to the broth and simmer until tender, about 10 minutes. When the chicken is cool enough to handle, shred the meat and add it to the soup. Ladle into individual bowls.

Peanut Butter Berry-Wich (*this recipe contains peanuts)

Ingredients

  • 2 slices whole-wheat bread or Banana Bread
  • 1 tablespoon natural peanut butter
  • 1 tablespoon softened Neufchâtel (reduced-fat) cream cheese
  • 2 medium strawberries, hulled and sliced
  • 1 teaspoon honey

Preparation

Lay the bread slices on a work surface. Spread the peanut butter on one slice and the cream cheese on the other.

Arrange strawberry slices in an even single layer on top of the peanut butter. Drizzle the honey on the berries and then place the other slice of bread with the cream cheese on top. Cut into halves or quarters.

Turkey Pinwheels 

Ingredients

  • 1 large whole-wheat wrap (11 to 12 inches), or 2 smaller wraps (8 inches), or a 12-by 9-inch rectangular lavosh
  • 1 tablespoon mayonnaise
  • 1 lightly packed handful rinsed baby spinach leaves
  • 1 tablespoon dried cranberries
  • 2 medium carrots, ends cut off, peeled and coarsely shredded
  • 2 slices Swiss cheese, such as Jarlsburg (2 ounces)
  • 2 thin slices store-bought roasted turkey breast (2 ounces)

Preparation

If necessary, warm the wrap in a 350°F oven for 2 minutes to soften before filling.

Lay the wrap on a work surface and spread the mayonnaise all over. Sprinkle the spinach leaves, cranberries, and carrots evenly on top. Arrange the Swiss cheese and turkey in even layers over the vegetable layer. Fold in the side edges and then roll up snugly from the bottom.

Cut crosswise into 4 even pieces and wrap tightly in plastic.

New features on the website such as the new “Create Your Dream Kitchen” application will allow one to customize their own kitchen. Choosing from three colors of kitchen cabinets, the user can build their kitchen by selecting from a full catalog of Elmira products. This new kitchen design tool comes complete with the ability to add or remove appliance options such as color, trim, or accessories. The Design Center will install virtual appliances in the cabinets of choice, and also price them out for the user. Additionally, visitors can also share their Dream Kitchen via email, Facebook and other social media platforms. The site is designed to offer customers a more engaging and user-friendly experience choosing which Elmira products are a fit for them. The site was built with responsive design properties, so regardless of the operating system or platform, customers will have a great experience designing their virtual kitchen, and using the rest of the site.

This website also features galleries of photos of Elmira products. The image gallery allows for customers to not only utilize the “Create Your Dream Kitchen” application, but potential customers can also see how other Elmira customers have incorporated appliances into their own kitchens. Additional website features include Google Translate, offering the text content of the site in over 70 languages, as well as a comprehensive social media dashboard, providing quick access to Elmira’s Twitter, Facebook, Pinterest and Houzz accounts as well as a link to this blog.

It’s about that time of year again, time to start the annual spring cleaning! Before jumping right into your cleaning, check out these 10 Simple Spring Cleaning Tips…

1. Formulate a Plan and Set Reasonable Goals

Jot down the areas of your home that you need to clean, come up with a plan, and be sure to budget your time accordingly so you don’t get distracted.

2. Check Your Cleaning Supplies

Make sure you have all the supplies you will need before starting your clean-a-thon. Nothing is more frustrating than getting halfway through a project and realizing that you are out of supplies.

3. Involve Your Children

Tis’ the Season for Holiday Baking!

It’s that time of year again… time to turn the house into a festive winter wonderland, shop for the perfect gifts, and prepare the holiday sweets and treats! This year, we at Elmira, are sharing with you some of our favorite Christmas cookie recipes to spread the holiday cheer!

#1- Chocolate Sandwich Cookies

Ingredients

  • 2 packages devil’s food cake mix (regular size)
  • 4 eggs, lightly beaten
  • 2/3 cup canola oil
  • 1 package (8 ounces) cream cheese, softened
  • 1/2 cup butter, softened
  • 3 to 4 cups confectioners’ sugar
  • 1/2 teaspoon vanilla extract
  • Red and/or green food coloring, optional

Directions

  • In a bowl, beat cake mixes, eggs and oil (batter will be very stiff). Roll into 1-in. balls; place on ungreased baking sheets and flatten slightly. Bake at 350° for 8-10 minutes or until a slight indentation remains when lightly touched. Cool.
  • In another bowl, beat cream cheese and butter. Add sugar and vanilla; mix until smooth. If desired, tint with food coloring. Spread on bottom of half of the cookies. Top with remaining cookies. Yield: 4 dozen.

#2- Peanut Butter Bark

Ingredients

  • 2 packages (4 ounces each) Semi-Sweet Chocolate Baking Bats, broken into pieces
  • 1 ½ cups (10-ounce package) Peanut Butter Chips
  • 1 tablespoon shortening (do not use butter, margarine or oil)
  • ½ cup roasted peanut or toasted almonds, coarsely chopped

Directions

  • Cover tray with wax paper.
  • Place chocolate in medium microwave-safe bowl. Microwave at medium for 1 minute, stir. Heat until chocolate is melted and smooth when stirred.
  • Immediately place peanut butter chips and shortening in second microwave-safe bowl. Microwave at medium 1 minute, stir. Heat until chips are melted and smooth when stirred; stir in peanuts.
  • Alternately spoon above mixtures onto prepared tray; swirl with knife for marbled effect. Cover, refrigerate until firm. Break into pieces.

#3- Classic Sugar Cookies

Ingredients

  • 3 cups all-purpose flour
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup sugar
  • 1 egg, beaten
  • 1 tablespoon milk
  • Powdered sugar, for rolling out dough

Directions

  • Sift together flour, baking powder, and salt. Set aside.
  •  Place butter and sugar in large bowl of electric stand mixer and beat until light in color. Add egg and milk and beat to combine. Put mixer on low speed, gradually add flour, and beat until mixture pulls away from the side of the bowl. Divide the dough in half, wrap in waxed paper, and refrigerate for 2 hours.
  • Preheat oven to 375 degrees F.
  • Sprinkle surface where you will roll out dough with powdered sugar. Remove 1 wrapped pack of dough from refrigerator at a time, sprinkle rolling pin with powdered sugar, and roll out dough to 1/4-inch thick. Move the dough around and check underneath frequently to make sure it is not sticking. If dough has warmed during rolling, place cold cookie sheet on top for 10 minutes to chill.
  • Cut into desired shape, place at least 1-inch apart on greased baking sheet, parchment, or silicone baking mat, and bake for 7 to 9 minutes or until cookies are just beginning to turn brown around the edges, rotating cookie sheet halfway through baking time.
  • Let sit on baking sheet for 2 minutes after removal from oven and then move to complete cooling on wire rack. Serve as is or ice as desired. Store in airtight container for up to 1 week.

#4- Maple Snow Taffy

Ingredients

  • 1 cup maple syrup (ours is B-grade amber-cheaper and darker-and we love it)
  • 1/4 cup salted butter
  • Clean snow (or, need be, ice cream)

Directions

  • In a medium-sized pot over medium heat, heat the syrup and butter together until the mixture reaches 220ºF-235ºF on a candy thermometer. If you don’t have a candy thermometer, time it for about 5 minutes after it comes to a boil, and then pour a little onto a plate that’s been waiting in the fridge: when the syrup is ready, it should thicken up into a soft taffy on the plate; if it doesn’t, then cook it a minute or two longer.
  • Let the mixture cool for a couple of minutes, then pour it by the spoonful over bowls of clean snow (or ice cream) where it will harden into a sweet lump of maple insanity.

Woodstoves: A Resource of Renewable Energy

For those looking to decrease their carbon footprint, they could start in the kitchen with their stove.
